One of the greatest ways we can support this is by gaining a better understanding of what our customers experience on a day to day basis, which is why last Friday we sent team member Clare Booker on the National Federation of Fish Friers (NFFF) fish frying course for beginners.
The practical one-day course introduced Clare to the various intricacies of the fish frying process, including what oils and fats to use, how to select and prepare produce and cooking techniques including range management, frying temperatures and portion control. What stood out the most was the amount of hard work involved, as Clare said:
“I was amazed at how much preparation work is done before the frying even takes place. It was hard work and we only made a small amount – in an existing shop they would be repeating the process many times over on a daily basis in much greater volumes. It has certainly given me a new found respect for all fish and chip shop owners and their employees!”
Clare’s trainer was Richard Wardell, Training & Accreditation Manager at NFFF and he certainly made a good impression, taking Clare through all of the processes including cleaning up afterwards.
“Richard was a fantastic trainer, extremely knowledgeable in all aspects of the course and a really nice guy!”
The best part of the day? Lunch time of course, and the opportunity for Clare to sample the results of her hard work in the morning.
Clare joins other members of the Florigo team who have taken this course and who understand the demands fish and chips shops are under every day.
